Pre-Apprenticeship Program

A Food Safety Management System (FSMS) is not only a legal requirement, but a helpful tool to ensure safe practices are followed within food businesses. FSSI and Santiago College have teamed up to offer aspiring food individuals an opportunity to kick-start their careers. Two online courses (Quality & Regulatory Compliance and Food Safety), these two courses will help grasp a better understanding of the SCIENCE behind Food, Safety, and Quality. 

SELF-PACED PROGRAM

STEP:1 

Pre-Apprenticeship Career Pathway - A step to a higher skill career

Two online courses that may be of particular interest to those in the food industry. These are (also) offered as 4-week online courses for college credit. They can be taken as standalone courses or as part of a certificate program. 

Bio194 Quality and Regulatory Compliance in Biosciences

This course will cover quality assurance and regulatory compliance for the biosciences industries. Topics will span quality control and Federal Drug Administration (FDA) regulations for the biotechnology, biopharmaceutical, biomedical device, and food industries. Theories and applications of quality assurance and quality control will be presented, and several different quality systems will be discussed such as GMP (good manufacturing practices), ISO 9000 (International Standards Organization), Six Sigma, and Lean. OUTCOME: Certificate of completion 

Bio196 Food Safety

This course covers the regulatory agencies that oversee, and the methodologies prescribed to ensure a safe food supply. The basics of quality assurance and quality improvement as applied to the food industry as well as The Food Safety Modernization Act, hazard analysis critical control points (HACCP), product traceability, food allergens, and food contaminants including microorganisms are presented. Illnesses known to result from ingestion of contaminated foods are discussed. OUTCOME: Certificate of completion

Current Good Manufacturing Practices (cGMP) are the practices required to be in compliance with the FSMA law. The authorization and licensing of the manufacture and sale of food and beverages, cosmetics, pharmaceutical products, dietary supplements, and medical devices are controlled by the FDA.

II. Sanitation Standard Operating Procedure (SSOP)

E-Learning Module

Sanitation Standard Operating Procedure (SSOP) is a written documentation of procedures or programs used to maintain equipment and the environment in a sanitary condition for food processing before, during, and after. It is a step-by-step description of cleaning and sanitizing procedures and specifies what is to be cleaned in order to produce safe products.

As a Certified Quality Improvement Associate (CQIA) you will have a basic knowledge of quality tools and their uses and be involved in quality improvement projects, but will not necessarily come from a traditional quality area.
